Chicken Honey Soy

chicken thighs
5 cloves of garlic
3 inch piece of ginger
low sodium soy sauce
2 tbs. of honey

In a bowl, combine chicken, grated garlic and ginger, soy sauce and honey. Cover with plastic wrap and refrigerate for 3 hours. Remove from fridge about half hour before roasting to bring to room temperature. Heat oven to 425 degrees. Place chicken on a rimmed baking sheet with some of the marinade. Place on middle rack and roast for 30 - 40 minutes until golden brown and internal temperature reads 165 degrees.
